I have made this desert only one time, and i must say it was a total success! Ive had dozens of people already requesting me the recipe, so here we go…

By the way, I initially was just searching for a way how to incorporate summery fruits like peaches in a desert, and i was really stuck in making it raw. But after i tried the peach compote, i decided i am going to give myself some grace and enjoy it fully as it is!

Time of preparation: 90 min

Total time cooking: 4 hours



For the bottom crust

  • 100 gr raw almonds
  • 100 gr raw cashews
  • 2 tbsp date syrup


For the coconut/cashew layer

  • 100 gr raw cashew
  • ½ can coconut milk
  • 1 tbsp date syrup
  • ½ lemon
  • 1tsp vanilla extract
  • 3 gr agar agar


For the peach compote layer 

  • 5-7 peaches
  • 2 tbsp date syrup
  • ½ lemon
  • 1 tbsp water


For the crust

  1. blend the almonds and cashews until fin and smooth
  2. pour into a bowl and add the date syrup
  3. keep mixing with a fork until a smooth dough
  4. pour on the bottom of a tray and flattened with the back of a spoon
  5. you can water the spoon a little to avoid sticking
  6. leave in the fridge to chill


For the coconut/cashew layer

  1. put all in a blender and blend until smooth
  2. Leave for 10 minutes
  3. Pour onto a pot and bring to boil
  4. mix all the time
  5. when the first bubbles appear, remove from the fire
  6. leave to chill for at least 10 minutes, but don’t let it thickening
  7. Pour on top of the crust and let it chill in the fridge for at least 1 hour, or until it is firm


For the peach compote layer

  1. wash and clean the peaches
  2. cut in small pieces
  3. put in a deep pan and add the rest of the ingredients
  4. bring to heat
  5. At this point you can add more water to avoid burning
  6. Bring to boil and let it boil for 10 minutes
  7. remove from the fire and let it chill
  8. Pour on top of the coconut/cashew layer and put back in the fridge for at least 1 hour or until firm

Serve with some chopped raw nuts like pecans or cashews on top and enjoy!
